Description
A cheese factory visit near Catania brings you to a working dairy on the fertile land around Mount Etna, for about an hour. You enter a glass-walled production room and watch fresh cheese being prepared as it happens. Which cheese depends on the day: you see either mozzarella or provola take shape, from working the curd to stretching and moulding it.
A member of staff explains what is happening in Italian or simple English, using translation tools when needed. The talk is meant for visitors new to Italian cheese-making and sticks to clear ideas, such as how the volcanic soil, local farming and daily craftsmanship shape the final product.
Then comes a guided tasting of five cheeses, ranging from soft and fresh to firmer, aged ones, with water to refresh the palate. This is neither a cooking class nor a workshop: you watch, listen and taste. It can be combined with a hike of either length on Etna.
- Production seen through the glass laboratory
- A simple commentary in Italian or English
- Five local cheeses to taste, with water
